a nice salad, you can do the prep work ahead of time to speed things along. Ingredients:
12 oz jicama, peeled and julienned |
1 large red bell pepper, julienned |
1 yellow pepper, julienned |
2 tbsp lime juice |
1 tbsp organic mayonnaise |
1 garlic clove, mashed |
1 tsp shredded fresh ginger |
1 tsp chili powder |
salt and pepper to taste |
1/4 c cilantro, finely chopped |
4 tbsp pumpkin seeds, for garnish |
Directions:
1. Combine jicama and peppers in a bowl, then set aside. 2. Purée lime juice, mayonnaise, garlic, ginger, and chili powder in a blender. Season to taste with salt and pepper. 3. Pour blended dressing over jicama mix, add cilantro, and lightly stir until coated. Sprinkle pumpkin seeds on top. |
