a nice salad, you can do the prep work ahead of time to speed things along.
Ingredients:
12 oz jicama, peeled and julienned
1 large red bell pepper, julienned
1 yellow pepper, julienned
2 tbsp lime juice
1 tbsp organic mayonnaise
1 garlic clove, mashed
1 tsp shredded fresh ginger
1 tsp chili powder
salt and pepper to taste
1/4 c cilantro, finely chopped
4 tbsp pumpkin seeds, for garnish
Directions:
1. Combine jicama and peppers in a bowl, then set aside.
2. Purée lime juice, mayonnaise, garlic, ginger, and chili powder in a blender. Season to taste with salt and pepper.
3. Pour blended dressing over jicama mix, add cilantro, and lightly stir until coated. Sprinkle pumpkin seeds on top.
