Jicama Shrimp And Mango Salad |

This is a very light, very tasty salad good enough to serve guests. A lot of wonderful flavors going on in this dish. Ingredients:
3/4 cup water |
2 teaspoons salt |
1-1/2 pounds large shrimp shelled |
1 small jicama peeled and cut into 1/4 dices |
1 mango peeled and cut into 1/4 dices |
1/2 cup chopped cilantro |
6 tablespoons lemon juice |
1/2 teaspoon dijon mustard |
1/4 teaspoon freshly ground black pepper |
1/4 cup olive oil |
Directions:
1. In large skillet bring water and 3/4 teaspoon of the salt to a boil. 2. Add shrimp then cover and bring back to a boil. 3. Cook covered over moderate heat for 1 minute then stir well. 4. Continue cooking for 2 minutes then drain well. 5. When shrimp are cool cut each one in half lengthwise and then in half crosswise. 6. Put shrimp in a large bowl and add the jicama, mango and cilantro. 7. In a small bowl whisk together lemon juice, mustard, remaining salt and pepper. 8. Add oil slowly while whisking. 9. Just before serving add vinaigrette to shrimp mixture and toss. |
