Ingredients:
2 cups julienne-sliced jicama |
5 oranges, peeled and sectioned |
1/4 cup sliced green onion |
1/4 cup chopped fresh cilantro |
3 tablespoons nonfat sour cream |
1 1/2 tablespoons fresh lime juice |
1 1/2 teaspoons vegetable oil |
1/8 teaspoon salt |
Directions:
1. Combine first 4 ingredients in a medium bowl; toss well. 2. Cover and chill. 3. Combine sour cream, lime juice, oil and salt in a small bowl; stir with a wire whisk. 4. Just before serving, drain jicama mixture. 5. Pour dressing over jicama mixture; toss gently. |
