Jicama-Orange-Pepper Salad |

Great served with Enchiladas and Spanish Rice. Ingredients:
1/4 cup white vinegar |
1 tablespoon vegetable oil |
1/2 teaspoon sugar |
1/4 teaspoon pepper |
1/4 teaspoon chili powder |
2 cups jicama, peeled, julienne cut |
1 1/2 cups bell peppers, julienne cut |
4 large oranges, peeled and sectioned |
Directions:
1. Combine vinegar, oil, sugar, vinegar, chili powder in a large bowl and whisk until blended. 2. Add jicama, pepper, and orange. 3. Toss gently to coat and chill until ready to serve. |
