Ingredients:
1/3 cup mayonnaise |
2 tablespoons cider vinegar |
1 (11-ounce) can mandarin oranges, drained and liquid reserved |
2 cups shredded jicama |
2 cups shredded red cabbage |
salt and freshly ground black pepper |
Directions:
1. In a large bowl, combine mayonnaise, vinegar and 2 tablespoons liquid from mandarin orange can. Add jicama, red cabbage and mandarin oranges. Toss to combine. Season, to taste, with salt and pepper. |
