I found this recipe , and it sounded delicious, I haven't tried it yet, but I'm really anxious to get at it soon - Thought I'd share it with you anyway - This came from the kitchen of T. Corbin. Ingredients:
6 -8 apples, peeled, cored, and sliced |
2 teaspoons cinnamon |
5 tablespoons sugar |
3 cups flour |
1 cup vegetable oil |
1/4 cup orange juice |
2 1/2 teaspoons vanilla extract |
4 eggs |
3 teaspoons baking powder |
1 teaspoon salt |
1/2 cup water (or less) |
Directions:
1. Preheat oven to 350°F. 2. Place apple slices in a large bowl. Sprinkle with cinnamon and sugar and toss apples until evenly coated with mixture. Set aside. 3. In a large bowl put remaining ingredients and beat these together until smooth. Pour half of the batter into a greased tube pan. Arrange half of the apple mixture over it. Pour remaining batter and top with the rest of the apple mixture. Bake for 1 1/2 hours or until an inserted wooden toothpick comes out clean. |
