Pretty, fruit tart that is nice as a dessert or to go with brunch. Prep time includes 1 hour chill time for dough. Ingredients:
1/2 cup butter |
1/2 cup honey |
1 egg |
1/2 teaspoon vanilla |
2 teaspoons lemon juice |
2 cups whole wheat pastry flour |
1 (8 ounce) package cream cheese |
1/2 teaspoon honey |
1/2 teaspoon vanilla |
1 cup halved strawberry |
1 cup halved green grape |
1 cup halved red grapes |
1 cup unsweetened mandarin orange segment |
1/2 cup apricot preserves |
Directions:
1. Beat together butter and 1/2 cup honey in a large bowl. 2. Beat in egg, 1/2 t. vanilla and lemon juice. 3. Sift flour into liquid ingredients, stir to mix. 4. Form dough into a ball and chill for 1 hour. 5. Pre-heat oven to 350 degrees. 6. Butter a 12 inch pizza pan. 7. Press cookie dough into pan, trimming edges; prick with fork. 8. Bake on middle shelf for 15 to 20 minutes or until lightly browned. 9. Cool Thoroughly in the pan. 10. Beat together cream cheese, honey and vanilla; spread on cooled cookie crust. 11. Arrange fruit in an attractive design. 12. Heat apricot preserves in a small pan; brush lightly on top of fruit. 13. Chill before serving. |
