Not long ago my hubby & I ate at the S&S Cafeteria in Macon, GA and had some squash casserole that was so delicious! I've been searching for recipes and I finally came up with this one that I believe is really close to the one we had. Read more . I hope you all find this to be something you'll enjoy! Ingredients:
2 lbs yellow squash, sliced |
1 medium onion, chopped |
1/2 teaspoon salt (optional) |
1/4 teaspoon pepper |
8 ounces shredded cheddar cheese |
1/4 cup butter or 1/4 cup margarine |
1/4 cup all purpose flour |
1 tablespoon sugar |
2 eggs beaten |
1 cup milk |
pam cooking spray |
9 x 13 inch casserole dish |
Directions:
1. Cook the squash and onion in enough water to cover in a saucepan until tender. 2. Drain well and smash it up good. 3. Add cheese while squash is still hot and stir until cheese melts. 4. Add butter. 5. Mix in flour, sugar & pepper 6. Add eggs 7. Stir in milk 8. Pour into casserole dish that has been sprayed with PAM or similar type spray 9. Bake at 400 degrees F for 45 minutes or until set. 10. ~It is good for me to draw near to God. Psalm 73:28 |
