Sweet potatoes baked with a delicious crumbled nut topping that can be used as a side dish or even a dessert. I have NO idea who Senator Russell is!! LOL If anybody knows him tell him I like his sweet potatoes!! Ingredients:
3 cups mashed sweet potatoes |
1 tablespoon vanilla |
1 cup granulated white sugar |
2 eggs |
1/2 cup butter |
topping |
1 cup light brown sugar |
1 cup chopped nuts |
1/3 cup flour |
1/3 cup butter |
Directions:
1. Mix potatoes with vanilla, white sugar, eggs and 1/2 cup butter.
2. Pour into buttered casserole dish.
3. For topping - mix ingredients together and sprinkle on top of the sweet potato mixture.
4. Double the recipe since this does freeze well.
5. Bake at 350 degrees F
