My mother's recipe for a delicious coffee cake that she would serve at her bridge parties on Wednesdays. We would be excited on Wednesdays because we knew we would get the leftovers!....If there was anything left! Read more !
Ingredients:
cream - 1/2 lb(2 sticks) of butter and 1 cup sugar
mix well
add - 3 eggs - 1 at a time; beating well after each addition
beat in 1 cup sour cream
add 2 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
*sift the dry ingredients 3 times
blend in 1 teaspoon fresh lemon juice with 1 teaspoon vanilla and 1 teaspoon almond flavoring.
while cake is beating; prepare the filling
*filling
1 1/2 cups chopped toasted pecans
2/3 cup sugar
1 1/2 teaspoons cinnamon
grease 8 x 12 inch pan and spread half of the batter(moisten hand with water and spread evenly)
sprinkle half of nut mixture filling then spoon on remaining batter and top with nut mixture.
Directions:
1. Bake at 350 degrees for 30 - 35 minutes
