I made this for my co-worker who absolutely loved it! You could also add nuts to the frosting for a pecan-praline taste. Ingredients:
********cake |
2 sticks butter (room temperature) |
2 cups white granulated sugar |
4 eggs |
3 cups sifted all purpose flour |
1 cup milk |
1 tsp vanilla |
******filling |
2 sticks butter |
2 cups packed light brown sugar |
1/4 cup milk |
1 tsp vanilla |
**********frosting |
1 stick butter(yes, more butter!) |
1 cup packed dark brown sugar |
1 (16 oz) box powdered sugar |
1/3 cup heavy cream, or more if necessary |
1 tsp vanilla |
1 cup chopped nuts (optional) |
Directions:
1. Preheat oven to 350 degrees F 2. Grease & flour 3 9-inch round cake pans 3. *****FOR CAKE***** 4. Using electric mixer,cream butter until fluffy 5. Add granulated sugar and continue to cream well 6 - 8 minutes 6. Add eggs, one at a time beating well after each addition 7. Add flour & milk alternately; ending with flour 8. Add vanilla and continue to beat until well blended 9. Divide batter evenly in the three pans. 10. Level batter in each pan (slam the pans down on counter to remove any air bubbles) 11. Bake for 25 - 35 minutes or until brown and toothpick inserted tests done. 12. MEANWHILE, PREPARE CAKE FILLING 13. In saucepan, combine butter, brown sugar and milk 14. Cook and stir over medium heat for 3 - 5 minutes 15. Remove from heat and stir in vanilla 16. Remove cake layers from oven and allow cake to remain in pans as you prepare to stack layers and add the filling. 17. Remove first layer and invert cake onto your cake plate. 18. Pierce layer with toothpick over entire surface. 19. Spread about 1/3 of filling mixture on cake layer 20. Top with 2nd layer, repeat. 21. Top with the last layer and repeat process one more time. 22. ***NOTE***The frosting only goes on the outer cake, not in between layers. 23. ********TO PREPARE FROSTING******** 24. Melt butter in saucepan over medium heat. 25. Stir in brown sugar and cream 26. Bring to a boil and transfer to mixing bowl 27. Add the powdered sugar and vanilla 28. Beat with mixer until spreading consistency. 29. Add cream 1 teaspoon at a time if too thick 30. Top with nuts if you like! 31. ***ANOTHER NOTE*** 32. Frosting will get hard fast!
