Jessica's Vegetarian Sausages |

This can be shaped into sausages, burgers or into a nut roast Ingredients:
8 ounces wholewheat breadcrumbs |
4 ounces brazil nuts, finely chopped |
3 ounces mature cheddar cheese, grated |
3 ounces red leicester cheese, grated |
1/2 onion, very finely chopped |
1 tablespoon fresh parsley |
1/2 tablespoon fresh thyme |
3 eggs, beaten |
salt and pepper |
Directions:
1. Heat oven to gas mark 6 (220c). 2. Mix all ingredients together and season to taste. 3. Form into 10 sausages. 4. Bake on greased baking tray for approx 20 minutes. |
