a quick potatoe salad, a bit lower in calories than those made with mayonaise Ingredients:
3 lbs red potatoes |
12 oz green beans |
2/3 cup olive oil |
3 tbsp rice wine vinegar |
2 oz basil |
1/12 tsp dijon mustard |
3 cloves garlic, chopped |
1 pint cherry tomatoes, halved |
1 to 2 cups red onion sliced thinly |
3 1/2 cups red cabbage |
3 tbsp capers |
1 tsp sald |
Directions:
1. Cook red potatoes until tender. Add green beans halfway through cooking the potatoes. 2. Drain. 3. Add remaining ingredients and mix. |
