Jessica's Best Fried Chicken |

This was one of the first real entrees I learned to cook, and actually mastered. ;) My boyfriend begs for fried chicken at least 3 times a week! It is a little messy, but fairly simple to make, and well worth it! Again, I tend not to measure when I cook, so play with the measurements as you please! Ingredients:
oil, enough to cover about half of thickness of chicken slices when in skillet |
3 -4 lbs boneless skinless chicken breasts, cut into slices |
4 eggs |
1 tablespoon milk |
3 cups all-purpose flour |
1/2 tablespoon season salt |
Directions:
1. Set up assembly line of bowls: (1) raw, sliced chicken; (2) milk and eggs, whisked; (3) flour and seasoned salt; (4) skillet with oil on medium/high heat. 2. Make sure oil is HOT before starting. 3. Dip chicken in milk/egg mixture. 4. Coat with flour/salt mixture. 5. Carefully place chicken in skillet. 6. Let cook for about 5 minutes, do NOT turn chicken until necessary. 7. The key is to ONLY turn the chicken over ONCE! Cook about 3-5 minutes on each side, or until chicken is cooked through. 8. Place on plate with paper towel to absorb oil. |
