This recipe comes from a little book called ABC Jiffy Cookery. I've had it for over 50 years. I haven't cooked any of the recipes yet. I'm putting them here so I can find them easier. Ingredients:
4 slices bacon |
2 tablespoons minced white onions, soaked in 2 tblsp. water 5 minutes |
1 teaspoon shredded parsley |
1/2 teaspoon seasoning salt |
4 eggs |
1/2 cup light cream |
1 teaspoon seasoning salt |
1 teaspoon salt |
1/8 teaspoon black pepper |
1 cup swiss cheese, grated |
paprika |
Directions:
1. Cut bacon slices in two. Fry until partially cooked, but not crisp. Remove from pan. Saute onion and parsley in drippings until light brown. Season with 1/2 teaspoons seasoned salt. Spread in 8 inch pie pan. Beat eggs slightly with cream. Season with 1 teaspoons seasoned salt, 1 teaspoons salt and black pepper. 2. Pour over onions, sprinkle with cheese. Arrange bacon slices on top; sprinkle with paprika. Bake in a 350* oven 15 minutes or until eggs are set and cheese is melted. |
