JERKY CHILI - Need I say more.... Ingredients:
1/2 cup chopped slab bacon |
1 onion, chopped |
2 cloves garlic, minced |
4 or 5 chili peppers, chopped |
5 cups (8) fresh tomatoes, peeled and chopped |
2 cups beef broth |
2 tbsp chili powder (or more to taste) |
2 tbsp light brown sugar |
1 - 1/2 tsp cumin (or more to taste) |
1/2 tsp pepper (or more to taste) |
2 - 3 cups beef jerky, chopped |
2 - 3 cups kidney beans or pinto beans, cooked |
Directions:
1. Cook bacon in DO until fat is rendered but not crisp 2. Add onion and garlic, cook until tender - about 5 minutes 3. Add chili peppers, tomatoes and beef broth 4. Cook until tomaotes are soft - about 20 minutes 5. Combine chili powder, brown sugar, cumin and pepper - add to pot 6. Stir in beef jerky 7. Cook at a simmer or slow boil for 45 minutes 8. Add beans, bring to a boil and cook for 5 more minutes |
