Jerk Spiced Shrimp With Spinach |

I found this recipe in a Better Homes and Gardens Magazine. I make this using Dry Jerk Rub where recipe calls for jerk seasoning, but you can use any jerk seasoning. Ingredients:
12 ounces large shrimp, deveined and peeled |
1 1/2 teaspoons jerk seasoning |
2 tablespoons olive oil |
3 garlic cloves, minced |
8 cups spinach, fresh, torn |
Directions:
1. Rinse shrimp and pat dry with paper towels. 2. Place shrimp in small bowl and sprinkle with jerk seasoning, toss to coat. 3. In large skillet, heat 1 tbsp olive oil over medium-high heat. 4. Add garlic and cook for 15 to 30 seconds. 5. Add half the spinach. Cook and stir about 1 minute or until spinach is just wilted. 6. Transfer to serving platter. 7. Repeat with remaining spinach. Cover and keep warm. 8. Add remaining 1 tbsp oil to skillet. 9. Add shrimp, cook and stir for 2 to 3 minutes, until shrimp turn opaque. 10. Serve shrimp over wilted spinach. |
