Naturally lean and rich-tasting buffalo is now widely available in grocery stores. Its flavor is milder than other wild red meats. You also can use ground elk, deer, or lean beef for the patties. Cook the patties on a grill pan if it's too chilly to grill outdoors. Serve with baked tortilla chips. Ingredients:
1 cup chopped peeled mango |
3/4 cup chopped pineapple |
1/2 cup finely chopped red onion |
1/4 cup chopped fresh cilantro |
1 tablespoon fresh lime juice |
1/2 teaspoon salt |
1 small jalapeño pepper, seeded and finely chopped |
1 pound ground buffalo |
2 teaspoons salt-free jamaican jerk seasoning |
1/2 teaspoon salt |
cooking spray |
Directions:
1. Preheat grill. 2. Combine mango, pineapple, onion, cilantro, lime juice, salt, and jalapeño pepper in a medium bowl. Set aside. 3. Divide buffalo into 4 equal portions, shaping each into a 1/2-inch-thick patty. Sprinkle patties with jerk seasoning and 1/2 teaspoon salt. Place patties on grill rack coated with cooking spray; grill 5 minutes on each side or until done. |
