This is not a traditional recipe, but one borne out of necessity-essentially i was too hung over to go get omelet makings and used what was in the fridge. Ingredients:
2 tbsp. olive oil |
1 cups salsa |
4 eggs |
2 small tortillas |
1/2 cup cheddar |
1 avocado |
sour cream (optional) |
Directions:
1. Heat olive oil in skillet 2. Add salsa and bring to a simmer 3. Add eggs poach until desired hardness 4. Meanwhile toast tortillas in a skillet (or microwave w/ cheese) 5. Sprinkle with cheese and melt 6. place poached eggs with remaining salsa on totillas 7. Top with sliced avocado and sour cream |
