Just a quick and easy, ready in no time soup that my daughter just loves. Healthy and a great way to get in some veggies and fiber. Ingredients:
2 tblspns. olive oil |
1/2 lg vidalia onion fine diced |
3 cloves of garlic minced |
4 c. low sodium chicken stock or broth |
2 c. water |
1 can (14 oz) fire roasted diced tomatoes |
1 pk (10 oz) chopped frozen spinach |
1 can (14 oz) canelli beans drained and rinsed |
salt and pepper to taste |
1 tsp. dried basil |
grated parm for sprinkling |
Directions:
1. Sautee onion and garlic in olive oil for about 5 minutes till tender. 2. Add chicken stock, water, tomatoes, block of frozen spinach, salt and pepper to taste and dried basil. 3. Bring to a boil and simmer until spinach is thawed and cooked, about 10-15 minutes. 4. Add beans and simmer for another 10 minutes. 5. Adjust seasonings as needed. 6. Ladel and serve with grated parm sprinkled on top. 7. Serve with crusty bread and or a tossed salad. 8. Enjoy! |
