Great for Easter !! Ingredients:
1 1/4 cups self raising flour |
1/2 cup caster sugar |
1/2 cup coconut |
125 g cold butter, diced |
1/3 cup milk |
1 teaspoon vanilla |
100 g jelly beans, like jellybellies |
Directions:
1. Pre heat oven to 180 C. 2. Line 2 trays with baking paper. 3. Place flour, sugar, butter, coconut in food processor. 4. Pulse to make fine crumbs. 5. Add milk and vanilla, mix to a soft dough. 6. Cover and chill for 30 minutes. 7. Shape tablespoons of dough into oval shapes, flatten slightly. 8. Decorate with jelly beans. 9. Bake 10 - 15 minutes until golden. 10. Cool 5 minues then move to a wire rack. |
