From an old Panguitch, UT Relief Society recipe book. I've not made this yet, but it looks good. Sharing for my future reference. Prep and cooking time is a guess at this point. Ingredients:
1 cup sugar |
4 eggs |
1/2 cup boiling water |
1/2 teaspoon salt |
1 1/2 cups flour |
2 teaspoons baking powder |
1 teaspoon lemon extract or 1 teaspoon vanilla |
favorite jelly |
whipped cream |
Directions:
1. Preheat oven to 400. 2. Beat eggs and sugar until light and thick. 3. Add flour, salt, baking powder and flavoring. 4. Rapidly whip boiling water into batter. 5. Pour the mixture onto a cookie sheet fitted with wax paper and sprayed with non-stick cooking spray. 6. Bake 10-12 minutes. 7. Turn out onto a cloth which has been ran under cold water and wrung out. 8. Spread with your favorite flavor of jelly. 9. Using a damp cloth, roll up the cake. 10. Garnish with whipped cream. |
