Got this recipe from a friend last X-mas. We were talking about leftovers and I told her I bought several refrigerated piecrust in a box cause they were on sale. Now had a bunch in the freezer to use up and this was her suggestion. Sooooo simple! Ingredients:
1 (15 ounce) box refrigerated pie crusts (use just one crust) |
3 tablespoons apricot jam (or your fav) |
2 tablespoons walnuts, minced (don't use more as they are just to enhance) |
1/2 cup sugar |
Directions:
1. Unroll crust. Spread the jam almost to the edges. Sprinkle walnuts over jam. Rollup like a jellyroll. 2. Cut into 1/2 inch thick pieces using a serated knife. If you have truble cutting, use a little flour on the knife. 3. Onto a lightly oiled cookie sheet, place slices leaving about 1/2 inch between each. 4. Dunk a glass into the sugar and press slices til almost flat. Don't worry about cracks forming. 5. Bake 10-12 minutes in a 375 degree oven. Turn the tray when done halfway. |
