Perfect for Easter with all of the pastel colors. Possibilities are endless for flavor! Ingredients:
3-1/2 cups all purpose flour |
1 teaspoon baking powder |
3 sticks butter or margarine |
1 cup sugar |
2 pkg.(4 serving size each)your favorite jello flavor, divided |
(try strawberry and lime!).....2 separate batches |
1 egg |
1 teaspoon vanilla |
Directions:
1. Preheat oven to 400 degrees F. 2. Mix flour and baking powder; set aside. 3. Beat butter in large bowl with electric mixer on medium speed until creamy. 4. Gradually add sugar and 1 package of the dry gelatin, beating until light & fluffy. 5. Add egg and vanilla; mix well. 6. Gradually add flour mixture, beating until well blended after each addition. 7. Shape into 1 inch balls. 8. Place cookies 2 inches apart on ungreased baking sheets 9. Flatten with bottom of clean glass. 10. Sprinkle lightly with remaining dry gelatin. 11. Bake 8 - 10 minutes or until edges are lightly browned. 12. Remove from baking sheets to wire racks. 13. Cool completely. 14. Store in tightly covered container at room temperature. 15. Makes about 5 dozen cookies or 30 servings 16. With so many new flavors out there....the possibilities are endless.
