My mom always made this for holidays and special days when we were growing up. I am not sure where she got the recipe but we always loved it. It looks really pretty after it is all done and kids love it. Cooking time is chill time. Ingredients:
1 (3 ounce) pkg.. lime jell-o gelatin |
1 (3 ounce) package lemon jell-o gelatin |
2 cups boiling water, and 2 c very cold icy water |
1 cup evaporated milk (not the eagle brand condensed milk) |
1/2 cup mayonnaise |
1 (15 ounce) can crushed pineapple, well drained |
colored miniature marshmallows |
Directions:
1. Mix mayonnaise and milk together until smooth and lumps gone. 2. Make jello according to pkg. directions and stir both flavors together. 3. Gently stir in well drained pineapple. 4. Stir in mayonnaise/milk mixture. It will look a bit blobby but thats ok because it won't after it is set. 5. Put into a 9x13 pan. 6. Top with the colored marshmallows in a single layer all over top, making sure they are spread evenly. 7. Refrigerate until set. All day if possible. It will separate into two layers, the top being a light green and the bottom a dark green. 8. Cut into squares and serve when completely set. |
