These are fabulous and were a hit with everyone! I juice the oranges that I zest to use in the recipe. Ingredients:
2 cups self-rising flour |
1 cup sugar |
2 teaspoons orange zest |
1 1/2 teaspoons ground nutmeg |
1 teaspoon ground cinnamon |
1/2 teaspoon ginger |
1/3 cup vegetable oil |
1/2 cup orange juice |
1/3 cup buttermilk |
1 teaspoon vanilla extract |
1 teaspoon orange extract |
2 eggs, beaten |
1 1/2 cups fresh cranberries |
1 1/2 cups ground walnuts |
crumb topping |
1/2 cup flour |
1/2 cup brown sugar |
1/4 cup butter |
1/2 cup oatmeal |
Directions:
1. Preheat oven to 350. 2. Spray or grease 12 cup and 6 cup muffin tins. 3. Mix together flour, sugar, orange zest, nutmeg, cinnamon, nuts and ginger in large bowl. 4. In another large bowl mix oil,juice, buttermilk, vanilla, orange extract and eggs. 5. Mix together the dry ingredients to the wet in three batches. Mix only until the dry ingredients are incorporated. 6. Bake for 15 minutes or until brown. |
