Chicken Pasta with Oil and garlic dressing Ingredients:
1 lb boneless skinless chicken thighs |
1 lb whole wheat pasta |
1 pint cherry tomatoes |
3/4 oz. fresh basil |
2 garlic cloves |
1/2 cup olive oil |
1/2 lb asparagus |
Directions:
1. Season chicken with salt and pepper to taste, broil in oven until cooked through. Allow cool and cube into bite size pieces. 2. Meanwhile boil pasta per package directions. Drain. 3. Chop asparagus into 1 -2 pieces and boil about 7 min. 4. Halve tomatoes. Finely chop fresh basil and garlic. 5. In a large bowl mix pasta, chicken, asparagus, oil, basil, garlic, pepper to taste. 6. Serve warm topped with tomatoes and shredded Parmesan cheese if desired. |
