great side or main dish Ingredients:
1 teaspoon olive oil |
1 medium onion, chopped |
1/2 green pepper, chopped |
2 minced garlic cloves |
1/2 teaspoon cumin |
1/4 teaspoon oregano |
14 1/2 ounces tomatoes |
3 cups black beans, cooked |
1/2 teaspoon salt |
1/4 teaspoon black pepper |
4 cups white rice |
Directions:
1. Heat oil and sautee first 3 ingredients; add cumin and oregeno and simmer 1 minute. 2. Add remaining ingredients (except rice) and simmer for 15 minutes. 3. Sever over rice. |
