Jazzed Up Tortillas

In looking through a ton of different tortilla recipes, I couldn't find one with all the right ingredients, so I made up my own. :) Yes, again. :)
Ingredients:
4 cups flour (unbleached, all-purpose)
1/2 cup vegetable shortening
2 teaspoons salt
2 teaspoons emeril's original essence
1/2 teaspoon corriander
1-1 1/2 cups warm water
Directions:
1. In a stand mixer with the dough hook attachmet, add flour, baking powder, salt, essence, and corriander and mix together (can do this with the dough hook).
2. Add vegetable shortening and turn mixer on medium low until the mixture resembles coarse crumbs.
3. Add warm water slowly until dough comes together and forms a ball.
4. All bits from the side should be incorporated into the dough.
5. Let knead in mixer for 5 minutes.
6. After kneeding, cover with a towell and let it rest for 15-30 minutes.
7. After resting, tear off golf ball size pieces and roll into a ball.
8. On a lightly floured surface, roll them out with a rolling pin (getting them round takes a lot of practice!).
9. Cook tortillas in a pre-heated (on medium heat) skillet for 15-30 seconds per side.
