From the Kitchen of Sheila Spector, Ingredients:
1 tablespoon butter |
1 tablespoon extra virgin olive oil |
1 (14.4-oz.) package frozen pearl onions, thawed |
1 teaspoon sugar |
2 (14.4-oz.) packages frozen peas, thawed |
2 tablespoons fresh lemon juice |
1/4 cup coarsely chopped fresh flat-leaf parsley |
2 tablespoons butter |
1 1/2 tablespoons coarsely chopped fresh dill |
kosher salt to taste |
freshly ground pepper to taste |
Directions:
1. Melt 1 Tbsp. butter with olive oil in a large skillet over medium-high heat. Add pearl onions and sugar; sauté 5 to 7 minutes or until onions are caramel colored. Add peas and lemon juice; cook, stirring constantly, 2 to 3 minutes or until thoroughly heated. Remove from heat; stir in parsley, 2 Tbsp. butter, and fresh dill. Add kosher salt and freshly ground pepper to taste. |
