5 garlic cloves, minced |
1-1/2 teaspoons salt |
3/4 teaspoon pepper |
1 boneless beef chuck roast (3 to 3-1/2 pounds) |
1-1/2 cups strong brewed coffee |
2 tablespoons cornstarch |
1/4 cup cold water |
Directions:
1. Combine the garlic, salt and pepper; rub over beef. Transfer to a 4-qt. slow cooker. Pour coffee around meat. Cover and cook on low for 8-10 hours or until meat is tender. 2. Remove meat to a serving platter; keep warm. Skim fat from cooking juices; transfer to a small saucepan. Bring to a boil. Combine cornstarch and water until smooth; gradually stir into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with meat. Yield: 12 servings. |
