This is a great & easy dish that can be served as a side or as a meal with fish or chicken on top.
Ingredients:
jasmine rice
cherry tomatoes
lime juice
salt
pine nuts or walnuts
Directions:
1. Cook rice according to package
2. Wash & cut tomatoes in half
3. Place cooked rice & tomatoes in bowl
4. Season liberally with lime juice
5. Add a touch of salt
6. Top with your choice of nuts
7. This is a versatile dish that is a great side or can top with fish, chicken, tofu for a great meal.
