My first shot at homemade pilaf, and it was easy and came out tasting great! We had it with just a pork roast, but it would be good with anything Indian or Asian, I'm sure. Adapted from a recipe I found on . Ingredients:
2 shallots, sliced thin |
1 1/2 tablespoon olive oil |
a good-sized pinch each of |
ground mustard |
green curry paste |
turmeric |
red pepper flakes |
garlic powder |
2 teaspoons salt |
1 cup jasmine or other rice |
1/4 cup chinese chive tops, chopped |
Directions:
1. Saute the shallots over medium-low heat until softened, stirring so they come apart. 2. Stir in all spices except salt, toast in oil for one minute. 3. Stir in water, salt, and rice and bring to a boil. 4. Cook, covered, over low, low heat 15 minutes. 5. Remove from heat and let stand, covered, five more minutes. 6. Stir in chives and serve. |
