Japanese Style Salad Dressing |

Best served over iceberg lettuce or on any salad whose greens are sweet rather than bitter. Ingredients:
1/4 cup mirin (a sweet japanese rice wine available in asian markets) |
1/4 cup water |
1 tbs dried bonito flakes (also called dried or shaved bonito tuna flakes, also found in asian markets) |
1/2 cup soy sauce |
6 tbs japanese rice vinegar |
1/4 cup olive oil |
1/2 cup chopped gingerroot |
1/4 cup honey |
1/4 cup chopped carrot |
Directions:
1. In a small saucepan, combine mirin, water and bonito flakes, and bring to a boil. Remove from heat and strain, discarding the solids. Chill liquid, (called a dashi broth) 2. when dashi broth is thoroughly chilled, transfer it to a blender or food processor. Add soy sauce, rice vinegar, olive oil, gingerroot, honey and carrot, and blend until fine-textured and creamy. 3.
