JAPANESE STYLE POTATO SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Picker Estate in Terrell, Texas in 1984. Ingredients:
1 pound russet potatoes |
1/2 cucumber |
1/2 small onion thinly sliced |
1 teaspoon yellow mustard |
3 large sandwich slices ham cut into small squares |
1/2 cup mayonnaise |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |
1 apple sliced |
Directions:
1. Boil unpeeled potatoes. 2. Cut cucumber lengthwise and remove seeds then cut into thin slices and place in bowl. 3. Add salt. 4. Cut onion in thin slices and soak in cold water until ready to use. 5. Remove skins from cooked potatoes and cut potatoes lengthwise into pieces 1 wide. 6. Drain cucumber and drain onions well. 7. Place all ingredients into large bowl and mix well. |
