Bet I got your attention with this dish!!! It incorporates edamame and asian condiments along with the traditional guacamole ingredients such as avocado, lime juice, cilantro and tomatoes. This recipe is from Cooking Light and it is so interesting that I had to post it. This dish is served with veggies such as carrot sticks, celery, etc.
Ingredients:
1/2 cup edamame, shelled and chopped
2 tablespoons pickled ginger
1/4 cup green onion, chopped
1/4 cup tomato, chopped
2 tablespoons cilantro, chopped
1 tablespoon jalapeno pepper, seeded and minced
1 tablespoon sesame oil
2 tablespoons low sodium soy sauce
2 tablespoons fresh lime juice
2 avocados, chopped
salt and black pepper
Directions:
1. Combine the first 6 ingredients in a large mixing bowl, and toss well. Add sesame oil, soy sauce, and lime juice, toss gently. Add avocado, using a large fork or potato masher. Coarsely mash avocado to incorporate making sure to leave the guacamole chunky. Add salt and black pepper. Place in an air-tight container and refrigerate until ready to serve. Serve with celery, carrot sticks, broccoli, and asparagus.
