Very filling tasty noodle dish. Good for full meal. Was a hit even with people who don't like cabbage. Used 80% buckwheat soba noodles. Recipe from Green Cuisine Cookbook, 2006 Ingredients:
5 1/2 cups water |
85 g soba noodles, uncooked |
1 1/2 tsp sesame oil |
2 cups bean sprouts |
1 cup green cabbage, chopped |
3/4 cup red cabbage, chopped |
1/2 cup carrot, chopped |
1 tbsp grated ginger |
1/3 cup soy sauce |
1 green onion, finely sliced |
Directions:
1. Soba Noodles: Cook in boiling water for 4 minutes. Rinse under cold water 4-5 times draining the water each time to get rid of extra starch. 2. Boil the water, add noodles and cook until tender. 3. Saute the veggies in the sesame oil for 4 minutes. 4. Add the cooked noodles and cook for 4 more minutes. 5. Add the ginger and soy sauce. 6. Garnish with green onions & Serve. |
