This recipe goes with Japanese Fruit Cake Ingredients:
8 egg yolks, well beaten |
3 cups sugar |
1 cup golden raisins |
6 medium oranges, peeled, seeded, and chopped |
2 tablespoons butter or margarine |
1 (8-ounce) can crushed pineapple, drained |
1 cup grated fresh coconut |
Directions:
1. Combine egg yolks, sugar, raisins, oranges, and butter in top of a double boiler. Cook over boiling water, stirring occasionally, 30 minutes or until thickened. Add pineapple and coconut; cook an additional 10 minutes, stirring occasionally. 2. Remove from heat, and cool. Chill filling slightly before spreading on cake. |
