Excellent side dish Ingredients:
1 japanese eggplant |
1 tbsp canola oil |
1 tsp soy sauce |
1 tsp mirin |
1 tsp ginger juice |
1 tsp chili paste |
Directions:
1. Slice the eggplant into 1 inch disks, soak in salt water for a few minutes, rinse w/cold water and squeeze out extra liquid 2. Saute in oil until browned, around 8 minutes 3. Add Mirin, soy sauce, ginger juice and chili paste and cook until tender and glazed |
