This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Olsen Estate in Grand Prairie, Texas in 1982. Ingredients:
2 chicken thighs |
5 green beans |
1 small yellow onion sliced into thin strips |
1 shallot finely chopped |
1 teaspoon minced ginger |
1/2 teaspoon finely chopped garlic |
2 eggs beaten |
1/2 cup dashi |
3 tablespoons soy sauce |
2 tablespoons mirin |
1 tablespoon sugar |
green onion for garnish |
Directions:
1. Skin and chop chicken into small pieces. Saute onion, garlic, beans, shallot and ginger in the dashi for 5 minutes. Add chicken. Halfway through cooking mix soy sauce, mirin and sugar and slowly add half of this mixture to the chicken. Slowly drizzle the beaten eggs on top of chicken and let cook until eggs start to harden. Flip mixture into a bowl of hot rice. Serve immediately. |
