Japanese Carrot Salad Dressing |

It's not necessarily FOR carrots, it's made WITH carrots! Ingredients:
2 garlic cloves, crushed |
1/2 onion, pureed |
1 carrot, grated |
2 1/2 tablespoons gingerroot, grated |
1/2 teaspoon mustard powder |
2 teaspoons soy sauce |
2 teaspoons apple juice |
1 teaspoon sesame oil |
3/4 cup salad oil |
1/2 cup rice vinegar |
1 cup mayonnaise (optional) |
Directions:
1. Puree the garlic, onion, and carrot until very fine. 2. Add remaining ingredients and puree until well-mixed. 3. If you are looking for a creamier dressing, add the mayonnaise and mix by hand. 4. Chill well before using. |
