A local restaurant does themed benedict (Irish with corned beef...) so I decided to try something new (and clean out the fridge). Ingredients:
1 egg |
1/2 bagel (i topped with hummus) |
1 shiitake mushroom, sliced |
pinch chopped chive |
1/2 tsp miso paste |
drizzle water |
sriracha or other chili sauce |
Directions:
1. Mix a bit of water with the miso paste and chili sauce. I also added the mushroom stem because I hate to waste it. 2. Poach egg and prepare toast so they are done about the same time 3. Lightly poach the mushroom (I used the egg water and held the mushroom in a laddle) 4. Add any topping to toast (hummus, butter...) and place the poached egg on top 5. Decorate the top of the egg with mushroom slices, chive, and miso sauce |
