Here is a yummy Japanese salad dressing recipe from our Mum. D is a real carnivore at heart but could eat salad everyday with this dressing on it...wait he has been for the past 2 weeks! because he is staying with his mum while the rest of us are in Calgary! Goes great with any cool crisp salad greens or even steamed vegetables like Asparagus spears. May also be used for a marinade - especially for pork or poultry.
Ingredients:
1 cup light soy sauce (utsukushi)
1 cup rice vinegar
1 cup olive oil
1 small onion
1 small apple
2 -3 garlic cloves
1 carrot
1 tablespoon orange marmalade (robinson's) or 1 tablespoon brown sugar
Directions:
1. Place all ingredients together in a food processor or a blender and whiz until relatively smooth.
2. Keep refrigerated.
