This is pretty much a dump and simmer recipe after the meat is browned........great for carry-ins Ingredients:
2# ground beef |
2 large onions chopped |
2 reg can corn – do not drain |
2 reg can black bean – do not drain |
2 cans diced tomatoes –same size as above cans |
2 (i use 3) cans tomato sauce - same size as above cans |
2 packets taco seasoning ( i use mccormick or lawry's) |
1 bag fritos |
sour cream |
shredded cheddar or mexican blend cheese |
chopped green onions |
Directions:
1. Brown beef along with chopped onion, drain grease 2. Add all the cans of ingredients plus taco seasonings, mix well. 3. Simmer 1 hour or longer to allow flavors to blend. 4. To serve – 5. Place a healthy serving of fritos in the bottom of a bowl 6. Top with soup 7. Add a dollop of sour cream, shredded cheese, and chopped green onions. |
