The absolute best lemon meringe pie. Ingredients:
2 cups boiling water |
1 lemon |
1 cup sugar |
2 egg yolks |
1/4 cup cornstarch (generous measure) |
1/4 teaspoon salt |
1 tablespoon butter |
3 large egg whites (extra large) |
6 tablespoons sugar |
Directions:
1. You will use the rind of the lemon and the juice from the whole lemon. 2. Cream together all ingredients, except water and butter. 3. Add to boiling water stirring constantly until thick. 4. Boil an additional 2 minutes. 5. Add 1 tablespoon to mixture while cooling and mix. 6. Pour into baked pie shell. 7. Whip meringue ingredients until it is firm and you can form peaks. 8. Place meringue on top. 9. Bake in a 350 degree oven for 10-12 minutes, or until the peaks are golden brown. 10. Cool and serve. |
