This recipe was given to me by a co-worker. She said it is her mother's recipe and as far as she has ever tasted it is the best. I did a throrough search of Recipezaar and saw no other recipe exactly like it. Even though there are so many I figured when it comes to cakes it is the subtle differences that matter, so please give this one a try! Ingredients:
2 cups flour |
2 teaspoons baking powder |
1 1/2 teaspoons baking soda |
1 teaspoon salt |
2 teaspoons cinnamon |
2 cups sugar |
1 dash ginger |
1 1/2 cups vegetable oil |
4 eggs |
2 cups grated raw carrots |
1 (8 3/4 ounce) can crushed pineapple, drained |
1/2 cup chopped nuts |
optional 1/2 cup raisins |
1 (8 ounce) package cream cheese, softened |
1 lb powdered sugar |
1/2 cup butter, softened |
1 teaspoon vanilla |
Directions:
1. Preheat oven to 350. 2. Sift all dry ingredients together. 3. Stir in oil. 4. Add eggs one at a time and beat well after each addition. 5. Add carrots, nuts, and pineapple last. 6. Pour into 9x13 pan and bake for 35-40 minutes. 7. Frosting:. 8. Beat all ingredients together and frost when cake is cool. |
