Jannid's Couscous with Lemon, Spinach, and Feta |

Delicious as is for lunch or as a side dish for cooked mixed veges and legumes. Or good with grilled kabobs. I use habanero olive oil, but you use what you like. Also, you could use just lemon juice, but I like the mix. Ingredients:
1/2 c water |
1 t olive oil |
1/3 c couscous |
1 c spinach, torn |
1 t lemon juice |
2 t feta |
Directions:
1. Bring water, spinach, and olive oil to boil in small saucepan. 2. Stir in 1/3 cup dry couscous. Remove from heat, cover, let sit for 7 minutes. 3. Add either 1 t ea lemon and lime juice or juice of 1/2 a fresh lemon and 1/2 fresh lime, and 2 T Feta, and stir. 4. Eat warm or cold. |
