not low cal, but you have to have them. Do not use skim milk or they will be a bit dry. Use 2%. Whole milk is for when you are maintaining. Ingredients:
2 c flour, unbleached |
3 t baking powder |
1/2 t salt |
1/2 c shortening |
1 c cheddar, shredded |
3/4 c milk |
Directions:
1. Preheat oven to 450. 2. In large bowl combine flour, baking powder, and salt. Use a fork and cut in the shortening until it's the consistency of coarse meal - this is an important step, no large lumps please. 3. Stir in the cheese. Stir in just enough of the milk only JUST until it forms a soft dough (may not use all the milk). 4. Turn out onto a floured surface and knead about 10 or 12 times til just not sticky. 5. Press to 1/2 inch thickness. Cut with a 2 biscuit cutter or a small juice glass (wad up the last bits and pieces for a final biscuit). Place on a Pam sprayed or non-stick baking sheet and keep them a little apart. The further apart, the crustier the sides. 6. Bake for 8-12 minutes (all depends on your oven so watch closely) til lightly browned. 7. Eat them all right away. No butter needed. |
