Ingredients:
2 cups chicken breast
3 tbs. olive oil
2 ounces pork, cured bacon
1/2 cup cheese, mozzarella, part skim milk
1/2 cup cheese, parmesan, dry grated, reduced fat
2 cups mushrooms
1/2 cups onions
5 eggs
1/2 tomato
1 salt and pepper to taste
Directions:
1. in one pan, fry mushrooms and onions in 1 TBS. olive oil with salt and pepper to taste
2. in second pan, fry cubed chicken in 2 TBS. Olive Oil and 1 TBS. garlic
3. In bowl, combine 5 eggs with 1/2 cup cheese mixture
4. Combine veggies with chicken in a pie plate, then pour egg mixture over top.
5. Bake for 20 - 30 minutes, or until eggs are set.
6. Top with thinly sliced tomato, broil for 2-3 minutes.
7. Top with 1/2 cup cheese mixture. Broil until cheese is melted.
