Low Calorie, High Protein entre Ingredients:
2 cups chicken breast |
3 tbs. olive oil |
2 ounces pork, cured bacon |
1/2 cup cheese, mozzarella, part skim milk |
1/2 cup cheese, parmesan, dry grated, reduced fat |
2 cups mushrooms |
1/2 cups onions |
5 eggs |
1/2 tomato |
1 salt and pepper to taste |
Directions:
1. in one pan, fry mushrooms and onions in 1 TBS. olive oil with salt and pepper to taste 2. in second pan, fry cubed chicken in 2 TBS. Olive Oil and 1 TBS. garlic 3. In bowl, combine 5 eggs with 1/2 cup cheese mixture 4. Combine veggies with chicken in a pie plate, then pour egg mixture over top. 5. Bake for 20 - 30 minutes, or until eggs are set. 6. Top with thinly sliced tomato, broil for 2-3 minutes. 7. Top with 1/2 cup cheese mixture. Broil until cheese is melted. |
