Fregola is a Sardinia type of pasta it is toasted and has a nutty flavor.
Ingredients:
3 cups broth, and or water
salt
1 pinch saffron thread (optional)
1 cup fregola pasta
1 tablespoon unsalted butter or 1 tablespoon olive oil
2 tablespoons minced fresh italian parsley
2 tablespoons minced chives
Directions:
1. Bring water to boil.
2. Add salt and saffron.
3. Add fregola.
4. Lower heat and gently simmer for 10 to 15 minutes.
5. Drain and add butter/olive oil and herbs.
